Foods I is designed to give students an understanding of basic food preparation and the relationship between eating habits and good health. A variety of culinary skills will be introduced including proper measuring, tool and term identification, cooking methods, and brunch/lunch meal planning. Hands-on preparation labs include coffee cakes, lasagna, breakfast items, desserts and healthy entrees.

Gourmet Foods - Course No.:7233F

GRADES: 10, 11, 12 LENGTH: 1 Sem CREDIT: 0.5 Sem 1 Only OTHER: Extended Study Option

After completing Foods 1, students in Gourmet Foods will now accelerate into increased lab time and more advanced techniques.   Students will increase their culinary skills and knowledge while participating in a variety of fast-­paced, hands-­on labs. Possible topics covered include: pastas, soups, vegetables, fondue, desserts, novelty foods, meats(including seafood), herbs, and spices. To enhance diversity, there will be a focus on preparing a wide selection of foods from other cultures and regions of the United States.
PREREQUISITE: Foods I (must receive a C or better in previous Foods classes)

Infant Development - Course No.: 7232F

GRADES: 10, 11, 12 LENGTH: 1 Sem CREDIT: 0.5 Sem 1 Only

Infant Development studies all aspects of a child’s development from conception through the first year of life.  The course includes parenting, considerations that contribute to healthy infant development, prenatal development, labor, delivery, and the newborn. Each student will have the chance to wear an “Empathy Belly” simulating the physical characteristics of pregnancy as well as the opportunity to participate in the “Real Care Baby” parenting experience. “Real Care Baby” is not a requirement; an alternate assignment can be completed for the same amount of points. During this course students will visit a hospital’s New Life Center.

Pastry Arts - Course No.: 7234S

After completing Foods 1, students in Pastry Arts will now accelerate into increased lab time and more advanced techniques.  Students will enhance their culinary skills through an assortment of topics, such as yeast doughs, pies, pastries, cakes. Additionally, each student will prepare and decorate their own cake in order to learn the basic techniques of decoration and design. There is also a focus on entertaining and party planning which students will use in their personal life as well as to prepare them for potentially working in the restaurant industry.
PREREQUISITE: Foods I (must receive a C or better in previous Foods classes)

Preschool - Course No.: 7253S

GRADES: 9, 10, 11, 12 LENGTH: 1 Sem CREDIT: 0.5 Sem 2 Only OTHER: Extended Study Option (with department approval)

Preschool is designed for the student interested in understanding the growth and development of children ages 1-6. This course offers students the opportunity to interact with and teach preschool aged children in our preschool program housed within the high school building. This course provides a valuable opportunity for the students to explore their interests in this growing and challenging field.

Preschool 2 - Course No: 7254S 

GRADES: 10, 11, 12 LENGTH: 1 Sem CREDIT: 0.5 Sem 2 Only

Preschool 2 introduces the INCCRRA (Illinois Network of Child Care Resource and Referral Agencies) Gateways to Opportunity Early Childhood Education Level 1 credential curriculum to the Preschool course.  Students who successfully complete Preschool 1 Extended Study and/or  Preschool 2  would be eligible for the INCCRRA Early Childhood Education Level 1 professional credential.  The INCCRRA Gateways 16 module curriculum will be woven into the content of Preschool 2 throughout the course to complement the Preschool experience. Preschool 2 can be retaken as an extended study option with credit earned.
Preschool Extended Study is designed for students that have a serious interest in teaching as a profession.  Students are able to work outside the high school in a preschool or grade school setting for a few days a week.  Students can choose to work in a pre-kindergarten through sixth grade classroom. Students have various requirements throughout the semester and at the end of the semester create a portfolio to take with them. Students must have this class back-to-back with a free period to allow enough time to work off campus.

Style Studio - Course No: 7255F, 7256S

GRADES: 9, 10, 11, 12 LENGTH: 1 Sem CREDIT: 0.5 OTHER: Extended Study Option, Global Scholar Course

Style Studio is a semester course offered to all students.  This course explores elements and principles of design, color theory and schemes, fashion trends, history of fashion, and sewing techniques.  The course is a a hands on and project centered class allowing students opportunities to creatively explore the curriculum individually and in collaborative teams.  Style Studio will strengthen a student’s interest and background in design concepts in multiple industries.  This course is recommended to students who wish to explore careers in this field, are creative, and have in interest in fashion and design.
